- Blanch the cauliflower florets in boiling water by adding a little salt and 1/2 tsp turmeric powder. Once ready strain out the water and keep it aside.
- In a pan heat 1 tbsp oil on medium flame. Add 1tsp cumin seeds, fennel seeds, ginger, green chilies, cinnamon, and cardamom.
- Saute for 1 to 2 minutes until the raw smell is gone. Then add the sliced onions and continue cooking on low flame till the onions turn translucent.
- Now add the tomatoes, once the tomatoes start turning mushy add turmeric, chili powder, coriander powder. Cook till the mix starts leaving the oil.
- Now add the soaked cashews and again mix well. Turn off the flame and keep aside to cool.
- Once it cools grind to a coarse paste.
- In the same pan heat, 1 tbsp oil add 1/2tsp cumin seeds and curry leaves. Once it starts to splutter add the paste and cook for a minute.
- Now add the blanched cauliflower into this. Adjust the consistency by adding water and add salt as per taste. Continue cooking for about 2-3 minutes and the korma is ready.
