- 500 gms mutton with bones
- 2 onions sliced finely
- 1 onion chopped roughly
- 2 tbsp raw papaya paste
- 5-6 cashewnuts
- 1 tbsp ginger paste
- 2 tsp garlic paste
- 3 tbsp curd
- 2 tbsp tomato puree
- 2 bay leaves
- 2 potatoes
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- 1 tbsp Shaan Korma masala
- 1 tsp black pepper powder
- 3 cardamoms
- 4 cloves
- 1 inch stick cinnamon
- 5-6 peppercorns
- 4 tbsp mustard oil
- 1 tbsp ghee
- 1 tsp coriander powder
- 1 tsp cumin powder
- 2 drops kewra essence
Steps to make to make Mutton Shahi Korma
- Make a paste of raw papaya, chopped onion,cashewnuts and little water. Marinate mutton with curd, tomato puree,ginger garlic paste, 1/2 tsp salt, 2 tbsp mustard oil for at least 2 hours but preferably overnight and refrigerate. Heat ghee and mustard oil. Sprinkle half crushed whole garam masala and peppercorns. When they sizzle, add finely chopped onion and fry. Add the ground paste and fry till light brown.
- Add marinated mutton,all dry masalas and fry in low flame till oil leaves sides.Chop potatoes into 4 pieces each.In a separate pan fry the potatoes and add them to the mutton. Toss well so that masala coats potatoes. Pressure cook mutton for 10 minutes. Let the pressure release by itself.Open lid.Mutton will be soft and melt in mouth.Adjust gravy.
- Add 2 drops kewra essence and garam masala powder.Garnish with chopped coriander and serve hot with steamed rice, roomali roti,paratha or naan.
