- 4 eggs,beaten well
- 2 spring onion,chopped
- Salt
- Pepper
- 2 tbsp light soy sauce
- 4 cups cooked basmati rice(should be in room temperature,so while mixing it doesn’t break)
- Chinese style chicken curry
- 300 gms Chicken breast,skinned,cut to pieces
- 6 garlic cloves sliced into thin pieces
- 1 big onion sliced into wedges
- 4 dry red chilli,soaked in water
- 4 red chiili
- 1 tbsp Pepper
- Salt as required
- 2 stalks spring onion ( cut stems part and keep aside and slice remaining into medium size pieces
- 2 1/2 tbsp light soy sauce
- 1/4 tbsp dark soy sauce
- 1/2 tsp sugar (optional)
- 2 tbsp lemon juice
- 1 tbsp white vinegar
- Corn starch solution made from 1 tbsp corn starch and water
Steps to make to make Saturday lunch 18th Sep (Chinese style)
- Fried rice: Take a wok, heat it. Add a tbsp of oil add 1 tsp of ghee. Once it is hot, add the beaten egg and stir around. Once the egg is 3/4 cooked, add rice, and mix well. add soy sauce and mix well. Add the chopped spring onion and mix well. Sprinkle some pepper powder and serve hot
- Chicken curry:
- Marinate chicken pieces with salt and pepper for 10 minutes. Heat a pan, add 2tbsp of oil and peace chicken pieces. Cook till it’s brown on all sides and well cooked, on Low to medium heat.
- Add onion, garlic, hydrated red chilli and sliced red chilli padi. Add mix well and cook till onions are translucent. Add spring onion stem part. Mix well and cook for 2 to 3 minutes.
- Add the sauces, sugar, lime juice, and vinegar and mix well. Cook in low heat. Till the gravy is boiled and chicken pieces are well coated. Add corn starch solution and mix well. Cook till gravy thicken. Add remaining spring onions and mix well and serve hot.
